Devilish Eggs and Pederson's All Natural Bacon

This is a super easy recipe because all ingredients are "to taste" and your super bowl/party guests will devour them!

 

Hard boiled eggs sliced in half lengthwise

Yolks from boiled eggs

Mayonaise - to taste

Spicy Mustard - to taste

Pickle Relish - to taste

for spice add some sriracha or "Rooster Sauce" / Cayenne pepper works too

 

Pederson's bacon - If you can get honey bacon it's fabulous in this recipe or you can use hickory bacon and candy it yourself. Here's instructions and see pics below (to candy, lay bacon on rack over sheet pan, line with parchment paper or foil for easy cleanup, sprinkle with brown sugar, cinnamon and cayenne pepper - to taste. Broil til golden. Turn and repeat on other side and broil until bacon is crisp. Watch closely as the sugar will burn. Cut the half the bacon crosswise to make crumbles.)

 

To make yolk mixture -

Mash egg yolks with the back of a fork. Fold in wet ingredients gradually until a consistency is obtained that holds its shape. Add some candied bacon crumbles - to taste. Spoon mixture into a ziploc plastic bag. Cut off a corner and pipe mixture into egg white halves. Garnish top with remaining candied bacon pieces as shown below.
