Easy Salad for a pot luck BBQ

Have you ever been invited to a pot luck BBQ or a pool party but couldn't decide what you should take? This Bacon Broccoli Salad has been a huge hit for me and a new family favorite!

Bacon Broccoli Salad

Serves - 4, Cook Time - 30 Minutes

Ingredients

Salad

1 lb fresh broccoli florets
1 small to med red onion
1/2 cup dried cranberries
1/2 unshelled sunflower seeds
1/2 raw almonds pieces
6-8 slices of Pederson's Uncured Cherry Smoked Bacon

Dressing

1 cup mayonnaise
2 tablespoons apple cider vinegar ( can use white or balsamic too )
1/4 cup sugar

1. Blanch the broccoli florets.

 

 

2. Chop the bacon into small pieces and cook in a frying pan on medium heat for 8-10 minutes or until crispy and browned. Once cooked, place the bacon on paper towels to cool.

 

 

3. Chop the red onion into small pieces. Place broccoli, red onion, cranberries, almonds and sunflower seeds in a large bowl. In a separate small bowl, whisk together the mayonnaise, vinegar and sugar until blended then pour over the broccoli mixture.

 

 

4. Toss together to evenly distribute the dressing, top with the cooled bacon and serve. Can be served warm or prepared a few hours ahead of time and refrigerated.
