Paleo Cowgirl's Sweetens Up Breakfast With No Sugar Ham

It is true.  I am plagued with an insatiable sweet tooth, which can occasionally be a problem with my Paleo diet. Luckily for me, nature has made her fruits (and veggies) sweet enough for me!

This Paleo Ham, Apple, & Sweet Potato Scramble made my boring old pan of scrambled eggs into a sweet and delicious treat for my family and I (our girls loved it!).  I made this recipe for breakfast but it really would be great for any meal throughout the day!

This recipe’s got sweetness and spice and everything nice in it, which really helped to bring out the natural flavors in this dish! I started out with a Pederson’s Natural Farms No Sugar Petite Ham. I loved that the smaller size of this ham meant that my family could enjoy one ham meal without being stuck eating ham leftovers for the rest of the week like we often are during holidays. Everyone knows the struggle of mom trying to sneak leftover ham into every meal after New Years or the “there’s starving kids in (fill in the blank)” guilt trip! But with the No Sugar Petite Ham, you get the great taste of the ham without the guilt trip! So first I diced up the ham into small chunks.   I also diced ½ an onion, 1 apple, and 1 sweet potato into similar sized chunks.

Next, I added coconut oil to my frying pan and sautéd the onions for about 3-4 minutes.  I then added the sweet potatoes to the onions along with a little extra coconut oil and cooked it all for about 5 minutes.  Finally, I added the ham, apples, and spices to the frying pan and cooked it until the sweet potatoes and apples were nice and tender. I put the ham, onion, apple, and sweet potato mixture into a bowl and scrambled my eggs in the frying pan. Once my eggs were finished, I combined everything in the bowl, mixed slightly, and  served!

Y’all are going to want to try this one! Even non-paleoers will go crazy for this recipe!
