Well the weather has been beautiful in Southern CA so my family decided to kick it off with a big group weekend at the beach. I was in charge of the beach food for day one, which means lots of options, easy to grab, no plate required kind of snacking but we also need healthy options to keep us fueled for lots of surfing and beach fun. Also, we’ve got every type of palate going on here, picky, garbage disposal, paleo, vegan, young, old, lactose sensitive, gluten free, you name it! So what is a girl to do?!?! Prep some tasty options that are easily portable and let the family get creative. We started with a family bike ride to the local store. That’s my hubs and his mom back there. Come on slow pokes!
After a quick lap through the store we had plenty of veggie, fruit and cheese options and some super delicious Pederson’s No Sugar Ham for a good dose of protein to fuel our beach shenanigans.
The best part is that our petite ham is fully cooked, the perfect size and super versatile. I cut it in to some long strips for those that wanted to make “roll ups” and roughly cubed the rest. I prepped other ingredients and separated everything into re-sealable containers. The best part is anything goes. We had ham, tomatoes, green apples, carrots, white cheddar cheese, avocado and pineapple but there’s no limits. So, grab you favorites, a box of toothpicks, some napkins and the ice chest and you’re ready for a fun filled day on the sand.
The kids really loved mixing the fruits with the ham for a sweet and savory combo. My favorite was ham tomato, carrot and avocado. Here’s a pic of a few of our favorite combos!
