I'm thinking this recipe is super versatile! Put it on some crackers for an appetizer. Throw it on some toast for breakfast. Top some ice cream for a wild & crazy dessert. Heck, the possibilities are endless. Or, just eat it by the spoonful!
Keep refrigerated for 2 weeks.
Ingredients:
1 Package Pederson’s Uncured Cherry Smoked Bacon
1 Red Onion, chopped
1 Clove Chopped Garlic
12 Oz. Frozen Cherries
1/2 Cup Apple Cider Vinegar
1/3 Cup Vodka
2 Tablespoons Maple Syrup
2 Tablespoons Unsweetened Apple Sauce
1 teaspoon Dijon Mustard
Instructions:
1. In large skillet over medium-high heat, cook bacon until crisp. Transfer to paper towels to drain. (We cut the bacon into pieces prior to cooking.)
2. Remove all but 1 tablespoon of bacon grease from the pan. Add onion & garlic. Cook until soft, stirring often, for about 2 minutes.
3. Add cherries, vinegar, vodka, maple syrup, apple sauce, & mustard to skillet. Bring to a boil. Reduce heat & simmer until thickened (about 10-15 minutes).
4. Place bacon & cherry mixture in the bowl of a food processor. Pulse until very finely chopped & fairly smooth.
