Sausage & Egg Tostadas

Okay, this is a tasty recipe that's honestly suitable for breakfast, lunch, or dinner!

Serves 4

 Ingredients:

4 Corn Tortillas
1 Cup Canola Oil
1 Teaspoon Oil
1/4 Cup Onion, finely chopped
1/2 Cup Corn (frozen, fresh, or canned)
7 oz. Pederson's Natural Farms Kielbasa Sausage, sliced then quartered
1/2 Cup Green Chiles, roasted & peeled
4 eggs, beaten
1 Tablespoon Milk or Cream
Salt & Pepper
1/4 Cup Cilantro, chopped
1/2 Cup Feta Cheese, crumbled
1/2 Cup Tomato, chopped

 

Instructions:

1. In a small skillet (a little wider than a corn tortilla), heat 1 cup oil over medium heat. Once hot, fry the tortillas one at a time until crisp. Transfer to paper towels to drain excess oil.
2. In another skillet, heat a teaspoon of oil over medium-low heat. Add the onion & corn, stirring until the onion is soft, about 4 minutes.
3. Add the Kielbasa & green chile. Cook for 1 minute.
4. In a mixing bowl, gently beat the eggs with the milk and salt & pepper to taste.
5. Pour ingredients into the skillet. Cook the eggs, stirring the ingredients and folding the eggs until done.
6. Divide the egg mixture onto the tortillas. Top with cilantro, feta cheese, and tomatoes.
