Guiness Brats

Hold your hour!  You've got me gobsmacked now.  Guinness Bratwurst?  Yep, we did it.  We know, we know...traditional beer brats aren't pre cooked and you would never think to use a dark beer...but we kinda do our own thing and we like it that way.  Here's to firing up the grill this Saint Patrick's Day.  
 
2 packages Pederson's Bratwurst
4 tablespoons butter
1 whole yellow onion, thin sliced
1, 12 oz Guinness Extra Stout 
1/4 teaspoon salt
black pepper to taste
 
If you're going to be grilling these little beauties outside, get the fire started now so it's ready when the Brats are.  In a large skillet, melt butter over medium heat.  Add sliced onions and salt and pepper.  Sauté until onions just start to soften.  Add in the Guinness.  Add whole sausages to the beer and onion mixture; do not cut up the sausage.  Simmer uncovered over low-medium heat for approximately 10-12 minutes.  Remove sausages and continue to cook onions over low heat until brats are ready.  Grill the whole brats over medium heat for 3-5 minutes on each side, just long enough to form a nice grill mark.  
 
Remove brats from the grill and cut into bun length pieces.  Turn off heat on the onions.  Serve brats on a warm, buttered bun and top with the sautéed onions.
