Top O' the mornin' to ya! Did you know in Ireland they call bacon "bagun" and it's pronounced baw-goon? Yeah, it's true. These yummy "bagun" studded shortbreads will have you passing up the pancakes this St. Patty's Day and opting for a more traditional fair instead. We've been renewing our New Year's resolutions around here which means "paleo" has been a buzzword quite often. As a busy girl, meal planning and preparation has just never worked for me. I don't know if it's the fact that I can't sit still long enough to do it or the idea of going into a big box grocery store with all the fluorescent lights beating down on me while I will myself to walk past the oreos that makes it so overwhelming to think about. Either way, diet changes are hard for me. Enter "Paleo on the Go." For a girl who likes to experience good food, it has been a God-send. I can honestly say I've had a delicious dinner every evening this week thanks to Paleo on the Go!
